Monopole was opened in December 2012 by Chef Brent Savage and Sommelier Nick Hildebrandt who also own the award-winning Bentley Restaurant + Bar located at the Radisson Blu Plaza Hotel in Sydney’s CBD as well as local eatery, Yellow. Following the success of the Bentley, the duo wanted to expand to open a wine bar and eatery where they could experiment with a more casual concept, perfectly suited to its bohemian location. With Monopole, they’ve also welcomed Glen Goodwin to the ownership team. Come in to experience unique flavours and excellent wine list featuring over 500 rare and boutique wines, including over 30 by the glass or carafe. The decor has been pleasantly changed by Melbourne’s architect Pascal Gomes-McNabb focusing on the interior design providing rich dark woods and industrial metals throughout the restaurant.
