Ichibi is a Japanese restaurant focusing on the classic tradition of shabu-shabu dining. The shabu-shabu is a hot pot used to cook one's dinner, not unlike the French method of fondue dining. Guests select from a menu of different broths with different flavor profiles and then order meats and vegetables to cook in it. Ichibi's shabu-shabu is a family-style affair, where everything that is ordered is meant to be shared amongst the entire group. Fortunately, Ichibi has exceptionally large tables that can both fit large parties and the large amount of food that ends up spread out.

Numerous private rooms are available, in a range of sizes, as well as a counter adjacent to the 2 fish tanks, of which the restaurant is particularly proud. The chef serves generous portions of the freshest fish and seafood, delivered every morning. The cellar is home to a wide range of shochu and sake, some of which are not easily available.
