The wine pairing offered a varied of surprising good white wines from Germany, Austria pairing wonderfully with the first dishes, and a red Nebbiolo from Piemont for the piece of Lamb. What my wife and I loved the most were (i) the amuse-bouche with arancini filled with duck legs, the saibling roes and the Reh tartare, in particular the delicate products with a surprisingly good mix of flavors and crunchiness ; (ii) Then the beet composition with smoked eel and fresh cheese was served with a tarragon sour cream sauce that was a perfect arrangement; (iii) the amazingly delicate Brussels sprouts roll, like a dolma or a cabbage roll, but with the delicate arrangement of the sprouts leaves was accompanying the piece of lamb with a delicious carrot purée; (iv) the dessert a white truffle ice cream with quince and caramel was a surprisingly good association of truffle with sweets and refreshing. We also liked the presentation of the piece of Saibling but the taste of the fish was a bit overwhelmed by the two slices of the « champignon » (champignon de Paris) covering it. We also liked the Buchtel, a traditional German brioche, served with foamy beurre noisette covering a minced shallot, even if this dish was lacking the creativity of others, and the elements of surprise felt with other dishes. The service was both casual and offered by enthusiastic waiters or sommelier which were warming the heart. This February experience could not, unfortunately, benefit fully of the freshness of products cultivated in the garden and still the feeling if freshness was permanent all along the diner. With a bit of an effort with the service presentation and corrections to the dishes lacking full creativity, this chef could be considered seriously for a second Michelin star.
