Matt, the owner & proprietor, was welcoming & hospitable and took the time to stop and chat. The menu was stacked with a great choice, including classic gastro fayre, and modern twists on some old favourites. The service was outstanding - attentive but never overbearing. The food was excellent - we started with Bread & Dripping (my parents often talked about it, but this is next level umami), and Burrata with an Anchovy marinade. Both were superb, and I was slightly worried that the mains may not live up to the entrées. I need not have harboured any such doubts.... I chose the Wagyu Sirloin, which apparently is an ever-present on the menu, and my companion chose the Braised Pig's Cheeks. Matt was rightly very proud of the Wagyu Sirloin. Before the meal he brought out an uncooked sample. The steak was beautifully marbled, and there was a small piece of bone left on, as well as a nice layer of clean, white fat. Matt explained the rationale for the fat which renders down on cooking to flavour the steak. Here is a man who is at once both knowledgeable, and passionate about the food he serves, but importantly who has the wherewithal to back it up with real results. The sirloin arrived perfectly cooked, with a crisp outer coating, and a beautiful pink middle, with a flavour that was worth every penny. The accompanying peppercorn sauce was just right. Piquant and flavoursome complementing the steak without overpowering it. My companion's Pig's Cheeks were exquisite - the sauce (which contained Dill & Mustard) was quite simply sublime, and even though I had no regrets about ordering the Sirloin, I briefly considered ordering a portion of the Pig's Cheek for myself as well! My companion rounded off his repast with a Sticky Toffee pudding. Personally I do not care for puddings, but I did try the liquor, which was exquisite -treacly and sweet with a hint of aniseed bitterness.
