Great food and cozy environment in Salamanca

The location and ambiance are wonderful, and the staff is extremely helpful and knowledgeable. The wine pour (by the glass) was quite stingy. (My companion asked whether I'd received a taste or a complete glass. For American's, I'd say it was probably a 3-oz pour.) My steak tartar was innovative to say the least: in addition to the usual ingredients it had blue cheese mixed into it, which I have to admit our waiter did mention as a feature of the dish. Unfortunately the effect is that it completely overpowers the dish, especially when garnished with flaky salt. However, the waiter noticed that I was struggling, and offered (unsolicited) to remake it without the cheese, so the second version was merely very salty. Rabo de toro was that night's special, and it was exceptionally good. I came in a beautifully lacquered sauce that was rich and perfectly balanced. I expected more from the patatas fritas, which we ordered as a side. For the price they were surprisingly basic French fries that you'd associate with American fast-casual dining more than a fine restaurant. Dessert was excellent. A nicely dry and biting tarta de queso, using a unique Spanish cheese. My companion had a chocolate confection that would put most lava cakes to shame. All in all, a mixed bag, but I would return for the service and ambiance alone and stick closer to Spanish classics for the food. Those hit big.
