About the restaurant

MICHELIN Guide 2026

Set within the rolling hills of East Tennessee, Wilder at Windy Hill Farm and Preserve celebrates the flavors, traditions, and changing seasons of Appalachia.

Our name pays tribute to the Wilder Coal Camp, a small community along the Clinch River in the mountains of Virginia, once home to our founder, “Big George.” It honors the generations of families whose resilience and diverse cultural traditions helped shape the culinary heritage of Appalachia.

Led by Executive Chef Ben Warwick, our kitchen carries that spirit forward. Guided by the harvest from our garden, the rhythm of the seasons, and relationships with local farmers and producers, each menu celebrates familiar Appalachian ingredients in thoughtful and unexpected ways.

While Wilder offers a taste of Windy Hill, an overnight stay invites you to experience the farm in full, with seasonal dining and thoughtfully curated experiences included throughout your visit.

I cannot believe we only just found this place. I had venison, which you never would’ve known was venison, and the rolls and salad we had were both incredible as well. We enjoyed our time and will definitely be back soon!! Very down to earth hospitality.

Dancing Bear has swiftly become one of our most cherished dining destinations, so much so that upon returning to the area, a visit was nothing short of essential. The cuisine (most notably the filet and the pork chop), the service, and the ambiance are truly unparalleled. We extend our sincerest gratitude to our server, Ian, as well as to Nicole and Jameson, whose warm and gracious hospitality has made our experiences unforgettable time and time again. Should you be in search of a reason to dine here, consider this your invitation. We eagerly await our return to East Tennessee, and naturally, to Dancing Bear.
