Kīhei

About the restaurant

Chef Bernardo “JR” Oao devoted years to mastering the art of sushi, learning every detail of kitchen work, and steadily climbing the ranks through discipline, curiosity, and determination.

In January 2022, JR opened his own food truck and in just a few short months, that dream expanded into his first brick-and-mortar restaurant in Wailea, which opened its doors in November 2022.

Building on this momentum, Chef JR continued to grow. He launched his second restaurant, Oao Sushi Go, in Kahului—bringing fast, high-quality sushi to the heart of Maui and expanding his vision for accessible, elevated Japanese cuisine.

Now, with the opening of Hachi By Oao, JR marks the next evolution of his culinary journey. Hachi represents his deepest commitment to the craft: a return to traditional Japanese sushi with a focus on pristine ingredients, and refined technique. Here, guests experience sushi as Chef JR believes it should be—intentional, elegant, and crafted with heart.

The food was incredible and the presentation was fantastic. The chef did a great job presenting and explaining each plate and answered all our questions about the preparation of each item as well as some traditions and history. An experience we will never forget!

Food was amazing! Loved every bite. Service we received was friendly but did not cater to a simple need request. I have a special dietary restriction and cannot eat dairy. For this reason we wanted to order the sautéed vegetables without the crema sauce. We said “no we can’t do that…everything is pre-made” my husband went ahead and ordered the dish and it was literally sautéed vegetables sitting on top of the crema. Other than that we would go back - food was great!

**An unforgettable chef's table experience!** Visiting Maui with my daughter before she heads off to college, I let her choose our special dining experiences. She chose the chef's table at Ka'ana Kitchen over a luau, and I'm so glad she did! From beginning to end, everything was exceptional! Every dish was delicious, and we loved that we were served different tasting selections, allowing us to share and experience even more of the menu. A huge thank you to John, who was so much more than our server. He was our guide throughout the evening, making sure we had everything we needed and helping make the entire experience feel special. Chef Mark, who was leading the kitchen that evening, and the entire culinary team were wonderful. We especially enjoyed interacting with Ashley, the sous chef working directly in front of us. She was so personable and engaging, taking the time to talk with us while preparing the dishes. Watching the chefs work and getting to know them made the experience even more memorable. My daughter's only complaint? There was almost too much food! Not exactly a bad problem to have. The food, service, atmosphere, and personal interactions were all incredible. This was exactly the kind of special mother-daughter memory I was hoping to create. **If you're considering the chef's table at Ka'ana Kitchen, do it!** We loved every moment and would absolutely return.
