When I say the pasta and focaccia rocked our world, I mean it ROCKED our world. I didn't know which way was up or down, left or right, right or wrong, gay or straight. Like the focaccia paralleled with Chitarra truly was biblical - my soul left my body with every bite. Pure. Bliss. We legit booked a second reservation for while we are in Breck because Italy called, they want their Nona's recipe back. This meal was flavorful, prepared perfectly and served flawlessly. We asked for an extra side of parm and that was divine. We literally licked our bowls clean, using our SECOND order of focaccia. I want to be waterboarded by this pasta and the sauce. Literally hot and bothered and ready for round two of the Chitarra writing this out. Please go. Do yourself a favor and order the Chitarra and the focaccia. You won't be able to think straight or gay, and you'll thank me later. Your dreams will thank me.

⭐⭐⭐⭐⭐ Hands down, our favorite dining experience in Breckenridge so far! My friend Summer and I have enjoyed some wonderful restaurants during our trip, but Rootstalk has been the standout! From the beautifully crafted cocktails to the thoughtfully curated menu, every detail felt intentional. The seasonal offerings were creative, fresh, and beautifully presented, with flavor combinations that were just as impressive as the plating. You can tell there’s a genuine appreciation for the ingredients and the artistry behind each dish. The location is fantastic, and the atmosphere strikes that perfect balance between elevated dining and a warm, inviting experience. It’s the kind of place where you want to slow down, savor every course, and appreciate the experience. Rootstalk is an absolute gem in Breckenridge and a restaurant I would enthusiastically recommend to anyone who appreciates exceptional food, creative cocktails, and a memorable dining experience.
