His ingredient-led approach means that our menus always use the best of seasonal produce from farmers and fishermen we admire.
Mark is also an advocate for cooking with wild food and the connection to nature that this brings. Ingredients from venison, to game birds, to chanterelles to hedgerow fruits often grace our menus depending on the season. Wild food requires no agricultural intervention and delivers fantastic purity of flavour, inspiring Mark to create exceptional and original dishes.
It is this passion for food and attention for detail, together with our polished and friendly front of house service, that had seen Kitchen W8 awarded one Michelin star for 15 successive years.
