Signature Smoke. Texas Energy. The pit runs on Texas post oak, shipped from Texas. The brisket is smoked for 12 hours with just salt and pepper. The counter works the way it works in Lockhart: step up, order by the pound, watch the pitmaster carve, and carry your tray to a communal table covered in butcher paper. Moist brisket, spare ribs and short ribs, jalapeno cheese sausage, pulled pork nachos, longhorn cheddar mac and cheese, cowboy beans, honey glazed cornbread, and banana pudding that regulars refuse to skip. Reboot Happy Hour runs all day through Dec 31, and weekday lunch is $15, Mon–Fri, Noon–3: a turkey or pulled pork sandwich plus one Taste. Downstairs, the Boot Bar hosts live music Tue–Sat. Marc Glosserman spent summers in Lockhart, the barbecue capital of Texas. His grandfather was the mayor. Nearly 20 years later, Hill Country is a Texas institution in the heart of NoMad.     Excellent Texan BBQ restaurant. Very friendly and helpful waitress. The food was delicious, ribs, pulled pork and brisket were perfectly cooked and the portion for 5 was generous. Sides included coleslaw, brocoli and cucumber salads, which were really good as well. Corn bread was offered by the chef, which was nice as well. Strongly recommend for a family dinner

    Food was absolutely scrumptious for the price point. Would highly recommend their sandwiches the sweet carrot mash. My sister asked if the ribs were spicy and was told no, and when sat down was unable to eat them because they burned her mouth which was unfortunate because they were pricey.

    New chef 1. Brisket was spot on— flavor, moist and good crust 2. Sides: corn bread was fire; good corn dish New fries are very good but miss the waffle fries 3. Beans—need to bring back the chili. Beans alone isn’t cutting it. Mac and cheese was disappointing. Pasta was a bit undercooked and it lacked the cheesy creaminess 4. They didn’t have the German potatoes ready—can’t comment The staff is very friendly—would recommend If they fix some of the sides, this place would be packed every night

    Restaurant is closed for renovations but this hasn’t stopped them from having Open Table take reservations and confirm them as well.
