About this restaurant

Signature Smoke. Texas Energy. The pit runs on post oak imported from Texas. The brisket is smoked for 14 hours with nothing but salt and pepper. The counter works the way it works in Lockhart: step up, order by the pound, watch the pitmaster carve, and carry your tray to a communal table covered in butcher paper.

Moist brisket, spare ribs and short ribs, jalapeno cheese sausage, pulled pork nachos, longhorn cheddar mac and cheese, cowboy beans, honey glazed cornbread, and banana pudding that regulars refuse to skip. Happy hour Monday through Friday, 4 to 6.

Downstairs, the Boot Bar hosts live music Tuesday through Saturday. Dinner becomes a night out without leaving the building.

Marc Glosserman spent summers in Lockhart, the barbecue capital of Texas. His grandfather was the mayor. Nearly 20 years later, Hill Country is a Texas institution with a Manhattan address. Featured in The New York Times, Texas Monthly, Food Network, and the Washington Post.

    Food was good. Manager was wonderful. Service was terrible. My cousin ordered a grilled cheese and brisket sandwich. After waiting several minutes when it didn’t come with the food for the rest of the party , we asked the waiter. In a few minutes a brisket sandwich arrived. After explaining it was a grilled cheese and brisket, about 19 minutes later , a grilled cheese sandwich arrived. By that time everyone else had finished. We never got her grilled cheese and brisket (another member of the party had the same order and received hers). The manager did give us free dessert and didn’t make us pay for her food, but the damage was done

    Really incredible food and fun experience. One of the best BBQ we've tried in Manhattan and the service was great too: authentic texas hospitality. Pulled Pork and the Cucumbers are a must get.

    The food is good but unfortunately the service was lousy. And the noise level was close to the decibel level on the runway at JFK.

    It was so hard to get service for anything. She disappeared, and didn't reappear without us asking the bus staff, host or other server. The people at the bar that you order meat from acted like we weren't there for minutes until we finally asked "is this where we order?" because they ignored us, even though we were 2 feet away dfrom them. Even though I have been going to Hill Country for years. I even had a birthday there in the past. I loved it then. The place used to be vibrant, friendly and attentive. But every visit over the last few years has been just a little bit crummier than the previous visit. This is the end of a long slide into mediocrity. How far they have fallen.

    Brisket and pulled pork were great. Ribs were awful and a rip off for the price. Good sides. Fun vibe. Would return but skip the ribs altogether.

    We had a confirmed booking, made through Open Table, for a table at 10pm. When we arrived at 10.01pm, the restauarant was closed and empty. Two staff members were sat at the bar. They ignored us. We had to find anohter restaurant. How can they accept a booking and then be closed? How can they close the restauarant, when they know they have a booking coming?

    Cafeteria style pick up of food was a turnoff. Food was okay, over salted but tasty. For 40.00 expected more than 2 small ribs, two small slices of brisket and 2 sides.
