This is one of the best french restaurant I've ever been to. The cooking and flavor was perfect not to mention its decent service. I'd visit this place again on my next visit.

Had lunch with family on Christmas day 2018. Generally very good. A potential future 3 Michelin stars, but needs some tweaks based on the menu we had. The 4 hours cooked turnip should be more tender (may be even longer cook or at a different temperature). The monkfish was slightly overdone and the greens served with it were too chewy. Finally, the duck was too chewy. With tender and juicy roast duck available in numerous Chinese restaurants through out the world, if duck is going to be served as the main course, it needs to be as tender and juicy as the Chinese version. However, the potential was apparent and the overall experience was very good.

Foods here remind me alot of the l'Arpege in Paris, but nothing from the Fat Duck. Although Quintessence is the one with roots connect with Alain Passard.

We’ve been fortunate enough to dine at a number of Michelin restaurants globally (New York, Italy, Austria), and we visited 3 other Michelin restaurants while in Japan, and L’Effervesence was the most disappointing one. Though the restaurant is tastefully designed, and service was polite and efficient, it was also quite stiff and impersonal. There were definitely a few pretentious moments (such as the table side matcha service with exaggerated napkin folding and movements). There was a weird option cheese course that was included in the set menu, but not physically listed on said menu, so that caused a bit of confusion. Overall, flavours were good, but no dish stood out in particular, and no story was told through the menu. There was also some questionable plating on one or two dishes (ie the sashimi scallops that supposedly painted a portrait of the sky…). At payment, our card was declined twice, and they informed us they did not have a chip reader when I asked them to insert the card, rather than swipe it. This is quite shocking for a Michelin restaurant, albeit a 1 star one. We used the same card our entire trip, before and after the restaurant, so our card was not the issue. This particular card has no foreign transaction fees, so it was definitely irritating to pay over 50,000 yen for a mediocre dinner, and then have to use a different card WITH foreign transaction fees because the restaurant wasn’t properly equipped.

Best meal of my life. Creative dishes, wonderful flavors, excellent pairing. Maybe my only critique is that the pairing does not include a drink for each course (or even a warning that an upcoming course will not include a drink), so kind of a bummer and disappointing from a value perspective.

For duck main course, negi and cavolo nero are redundant.
Fish meal is bitter because of the over-roasted fish skin and ginkgo nuts.
I don't understand the wild grape element which tastes so-so.
The small cakes still leave much room for improvement compared to other awesome patisserie stores.
For ambiance, it's a little bit noisy.
The above is what I don't really like.

But for other parts, everything is super impressing, actually second to none.
I especially love the turnip, Almanac (the first meal), duck roast with white truffle, monkfish liver pie and unripe mandarin jelly.
Overall it's a wonderful experience.
The standard of food is close to Michelin 3-stars.

Always Amazing.This is my second visit and i have tried to find one area where the level has dropped. There was not. They have actually improved in every category. Wonderful .

I was expecting a French meal with Japanese flair but I got a Japanese meal with loose French influence. Don't go expecting the butter, garlic, cream, or other staples that normally define French cooking and I'm sure you'll enjoy your meal.

I do love this restaurant so much, everything here no more word than PERFECT, detail of foods and services are so lovely and very neat in every second, I can strongly tell you that L'Effervescence is more outstanding than other French with 3 Michelin stars restaurant in Tokyo, I will be back again for sure !!

Lovely settings match with simple, fresh and tasty seasonal local food. Me and my wife just love it. We had a great time in our first day in Tokyo, kicking off one of the best dining trip in recent years!

Will sure look forward to visiting again!

外国の方の接待のためご利用させていただきました。先方の方は日本語は通じませんが、英語は大丈夫です。サービスは最初英語が話せるスタッフでしたが、途中日本語しか話せない若いスタッフも提供してくれましたが英語のお料理の説明はありませんでした。これだけ少し残念でした。
王道フレンチではないが、楽しくいただけるお料理でした。お店の環境も綺麗で落ち着いた雰囲気でした。

We had a very memorable experience at L’Effervescence. A very unique combination of Japanese ingredients and French cooking tradition. The wine pairing had very interesting elements including Japanese natural wine and rare sake. Friendly, incredibly attentive and knowledgeable staff.

Mind blowing wine(+ sake and champagne) pairing given by sommelier Keisuke Kumekawa. Amazingly carefully planned and constructed with insane details... From Sanma sashimi with Jean Yves Peron's Cotillon des Dames to awesome elderflower soup accompanied with Klein Constantia's Vin de Constance, every pairing was near perfection, and to be honest, I might not be able to provide any better match than his. Among all, cheese plate and glasses Keisuke provided before heading to dessert courses were surely and clearly the best pairing I've ever had in my whole life, and it would last so for at least quite amount of time, I dare assure you. I sincerely appreciate for all the effort he and @leffervescence dedicated to this dinner. Thank you.

友人を元気付けたくてこちらで食事をさせて頂きました。
内装はダークトーンで落ち着きがあり、会話しながら楽しく食事が出来ました。
料理は趣向を凝らしたもの、素材の味を引き出したもの、シェフの幼少の体験から茶目っ気のあるもの等、来る人を楽しませるために工夫を凝らしつつ、それでいてシンプルに感じるものが多かったように思います。某有名フランチャイズの商品を彷彿させるようなパイやカブのグリルなどが印象的でした。特にカブは季節によって味や食感に変化のあるこの店の代表的な一品と聞き納得しました。カブはあまり好きではないのですが、ここのカブはまた食べたいと思えるとても美味な一皿でした。
ウェイティングスペースからの案内、苦手なものへの配慮や一品ごとの説明、ドリンクの相談からチェックまで、ホスピタリティも気持ちのいい対応でした。
もし何か一つ絞り出すならば、ウェイティングスペースでこの後の体験を期待させる小さな一品かウェルカムドリンクを用意する等の演出があるとなおいいかな、とも思いますが、それほど広いスペースではなく、テーブルでウェルカムドリンクが出てきましたので、これはやはり欲張りなリクエストだなと思います。
また季節を変えて行ってみたいと思います。

Fabulous meal cooked to perfection with Japanese ingredients prepared in a modern, French inspired way. The staff are very proffesional and welcoming providing just the right level of attention to detail. We thoroughly enjoyed the whole experience of our lunch with very well matched wines. A great special treat whilst holidaying in Tokyo.

お料理は目にも美しく、洗練されていて全て美味でした。フレンチ店ですが、日本ということを大事にされていて、和とのコラボが随所に感じられて好感持ちました。パンのバター代わりが、確か豆乳ベースの柔らかなクリームにオリーブオイルだったのが気に入りました。また、訪れたいお店です。

グルメの知人が絶賛していたので、お訪ねさせていただきました。

非常に満足したことを前提で、敢えて私の好みをお伝えするならば、和のテイストがやや強すぎるかな?と思いました。

あそこまで和にこだわるならば、和食の美食店でいただいた方が私としては口に合います。

個人的にはフレンチの極みを体験したかったです。

野菜はすべての生産者の名前がリストアップされていたり、ファストフードの包装でプレ全テーションされる料理があったりと「現代社会と食」のようなテーマがあり、語りたくなるレストランです。

ミシュランのお店なので、緊張するのではないかと心配していましたが、まったくの杞憂でした。
3時間ずっとワクワクし、たくさん笑いました。

今回で4回目の会食でした。
娘の誕生日を祝いました。
訪れるたびにスタッフの皆さんの温かい応対に感激しますが、今回は担当してくださったソムリエのK氏のお持て成しの気持ちが伝わって、とても心地の良い時間を過ごしました。
子供もOKらしいのでまた伺います!
