Poly is a walk-in wine bar by Mat Lindsay and the team from Ester.

We take limited reservations at selected times but save the majority of our seats for walk-ins. If you cant find a reservation online please give us a call or walk in!

We had a booking and was shown to a table for two. We got lost so we’re a little late but they were fine we were ask wat type of water we would like and the still water was chilled which was wonderful. We were left long enough to decide what we would like to order. The drinks menu is huge with choice of per glass wines and bottles great selection the plates of food are share. We started with the source dough bread rolls which were very nice with a dipping cheese and oil which was wonderful. We also had feta cheese and lamb encrusted ribs wonderful ending with the ice cream which was to die for so delicious. Friendly staff felt at home. Could become a regular Great background music.

Delicious and flavour packed inventive food but some of the servings were extremely small. I know it’s bar food but charge less? Interesting wines - a little pricey. Very slow service to start and hard to attract a waitperson’s attention but staff are lovely and friendly. I think the restaurant might be understaffed. Great place for a glass of wine and a few share plates. Definitely have the house made bread and burrata.

Every time I have been to Poly it has been exceptional. Wonderful staff and food that is outstanding. It keeps me coming back and its why I chose to celebrate my birthday there. My favourite dish has been the steak tartare - just brilliant. Will be back and introducing as many friends as I can to the Poly experience. Thank you!

Visited Poly on what turned out to be a busy Saturday night. Fantastic service and delicious food. Would strongly recommend for special occasions!

Nothing special, a very local bar, everyone seemed to know each other, felt out of place and staff didn’t appear interested in checking on us. Wound up with four small plates of food for 130, and we’re still hungry so went to another restaurant for dinner. Their plates are nothing more than appetizers. Not certain who, how or why we wound up here, but not worth the walk or effort to get there. We had so many nice dinners in Sydney, that Poly is definitley a pass.

First time at Poly! We love Ester but we loved Poly maybe just a little more. Food was amazing and the service was first class - friendly, knowledgeable and attentive. We'll be back.

We were excited to go to Poly as we love a good wine bar. The food was tasty and service friendly. The let down was the price of wine and the mark up. A decent bottle was approx $100 and over. We don’t mind paying for a good bottle but don’t expect these prices at a neighbourhood restaurant.

The menu was just okay we were looking forward to try some of the items from their instagram but apparently it wasn’t available. We had 3 entrees; scallops, enoki & potatoes. The potato with salted egg was worth to try. Mains were just okay we had the oxtail, snapper and steak. Oxtail was the best for us.

Overall the dishes were tasty and enjoyable. However, the service was very poor. Firstly we were seated and given menus. No one came to talk us through the menu or how many dishes would be suitable for two people. 20 min after being seated the waiter came over and said “what can I get you?” We then explained we hadn’t been here before so if you could explain how many dishes would be acceptable... we got a very short and blunt response saying “maybe 5 or 4 if you want”. Then he just walked away. Another 10 min he came back and took our order.. we ended up ordering 5 dishes as we were quite hungry however even though the food was delishous we realised we had ordered very rich and heavy dishes. Wish we had some more advice from the waiter as the menu items aren’t very descriptive.
Our location of where we sat was also an issue. We were constantly bumped as people walked past. We also ordered some wine which only came out half way through our meal (even though I saw it sitting on the bar across the room, the waiter just hadn’t brought it over)- the people next to us also had the same issue and had to chase down their bottle.
I think the restaurant could be 5 stars once they sort out the waiters- they are really dragging it down!

We had been looking forward to trying Poly & were not disappointed! We ordered way too much food for two people but could not resist the choices on the menu.
Every dish was well executed, the staff were extremely attentive & the Martini perfect.
I have already recommended my son bring his partner for a ‘date night’!

Food was excellent, and ambience was good as well, if a little loud. The meal was let down by the service. Not only was it inattentive, our waiter actually left several times before we had finished speaking to him. All in all it was a great meal and I would definitely come back, but the experience would’ve been rounded out well had the service been up to scratch.

Poly is awesome. It is a true dining experience, something so many restaurants have lost sight off. Wines that compliment food, staff that know the menu and wines, eating that is perfectly paced and food that is dynamic and interesting. Even the dish that may not be to your liking is perfectly ok as this is a dining experience, it’s ok not to like everything.... although you likely will. Thanks poly staff for a perfect afternoon.

The food and wine were good, but the service was cold at best; it was near-impossible to attract attention of the server to order more drinks and food that it felt like we were being purposefully ignored, making me wonder if it were my being non-white that was offending the waitress. The space is rather claustrophobic with very low ceiling and tables too close to one another. The noise level is almost unbearable. Upon our departure, our server asked if we were staying upstairs - I take that she meant Paramount House Hotel. Maybe the waitress mistook us for tourists and decided not to serve us; who knows? For whichever reason, that kind of service is unjustifiable.

Service, atmosphere and food was sensational. Just got a shock when one of the pepper varieties on the plate of peppers was exceptionally hot for my tastebuds- my partner loved that variety though.

Very cool space. Welcoming. And cool and original drink list. Wines that I have never seen on other wine list. Excellent service and knowledgeable staff. The food however was a little disappointing. Lacking flavours (King Prawns), and the steak (small plate) was tough and hard to chew. The Gouda donut sounded interesting, but was just way too greasy. On the other hand, the best garlic bread that I have ever had and good Kangaroo jerky. Prices are high as well. Would go back for a drink. But not for the food.

most wait staff were ambivalent, leaned over us to pour wine, serve drinks.
Had to try to catch eye to place orders.
Even when we first sat down all we were asked was did we want water, not anything else like a glass of bubbles etc.
Food was average
Good wine list though most bottles over $100
the female wait staff a the time was very good
best food was the burger
overpriced
id go for a drink and maybe a bar snack again but that would be it

Had high hopes as a sister restaurant to Ester, but was let down.

- we placed dietary requirements in the reservation, but server wasn't aware
- had to ask for our first drink order
- the potatoes (what we were looking forward to) sold out on a Saturday at 6.30pm (?!). Tables around us had them, we apparently missed out
- an allergen we specified to be excluded came in a dish that was served

I hope this was an exception rather than the rule... but definitely not in the same league as Ester which we love (... albeit at the same price point!)

Loved sitting at the bar tasting quite a lot of the menu. Everything was delicious and perfect for 2 to share. Seamless service, a lovely early birthday evening for me with a good friend. Thank you!

Very different menu and a wine list that really pushes boundaries. Staff are very attentive and knowledgeable. Has a wine bar vibe, but really shines when approached as a multi-course restaurant. Save Poly for when you have a few hours to really push the boat out. Top courses - pig's ear, flatbread, blood pie. I wouldn't order the crudites - beautiful vegetables but condiments eh.
