Outsanding Costa Rican food, local ingredientes, done in superb technic. The way Costa Rican food is cooked is a watershed moment. For good or for bad, has set a new standard for Costa Rican cousine. I really enjoy the used of tamarindo, pejibaye, heart of palm (palmito), corn, cacao, cinamom, and other local ingredients, with mero fish or lomo. San José Mayor shall do more to clean Barrio Amon. This landmark restaurante deserves more.

quality of food is good but the amount of sauce cellars and artistic presentation leave a lot to be desired. Tomy comment in person the chef responded well that's how I Like it. not to professional, as the client is the king, and in any case modern cuisine is delicate.. he is plate are a good but a mess of similar color tones. specially the exquisite lamb covered by a load of brown sause.

Silvestre is one of my favorite restaurants and definitely every time I go to Costa Rica is a place I go at least once to have dinner. Dishes are lovely presented. I think they depict Costa Rican culture very well. They use traditional ingredients in fascinating new ways which are always flavorful and representative of what Costa Rican modern cuisine can be. I think the waiter we had the last time was really friendly, but can definitely get a little more practice. Although service is good, it is still not outstanding when you compare it to other kind of high-end restaurants throughout the world. We did enjoy the degustation menu called Óptica. It was excellent and is definitely recommended..
