From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Dennis Bernard have developed a network of purveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander and now Beer Director Adam Vavrick, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

Our group of 4 unanimously felt is was an outstanding meal. The quality and diversity of the food was remarkable. I ate at Publican about 6 years ago and remember it as a B+ experience (very good) but this time it was A+ remarkable. The wait staff (Kat) was very helpful and knowledgeable and indeed every member of the staff was attentive and professional. We were seated in a "banquette" which was a big plus which help facilitate conversation as the restaurant is otherwise rather loud. Bottomline: our party felt it was one of the best meals in recent (and distant) memory.
PS the squid was the best our our lives and we only wish there was a bit more and the donut peaches off the charts.

Went to the Publican with 3 others. Our waitress recommended that we get 2-3 plates per person. We ended up ordering the daily pickles, house bread, oysters, meat try, half chicken and pork belly. All were phenomenal!

Portion sizes too small, unfriendly hostess, never got 2 items that we ordered, etc. I’ve been for dinner before which was great but this place is not great for brunch. We were running late because of traffic, I called to let them know we’d be a little late (15 minutes) and they told me that they only hold reservations for 15 minutes. they made it seem like we would be kicked to the curb if we showed up at 1:16 so we rushed and panicked—the restaurant was half empty. Horrible practices all around.

A neighbor, and former Chicagoan, recommended The Publican to me; said it was a great spot for brunch, but noted any meal here was sure to be good. I went to Chicago for a girls weekend and the three of use had reservations for Sunday brunch before hitting the road home to Mpls. We all loved it. It was a beautiful morning, hot, but lovely. We got lucky and got a table on the patio in the shade which was just perfect. And we found the patio so much quieter than inside. Lovely little neighborhood. Great food. Great service. We'll go back for sure. Try it - you won't be disappointed.

The peach salad was not only creative but over the top delicious, and the pork belly is a must have menu item. It was probably the most delicious, tender, and well prepared pork belly dish we ever had. The service was attentive although we got the feeling that the server hadn't tried some of the dishes because she wasn't able to describe them, or even tell us the ingredients when we asked more than once what was in the dish. Other than that, I highly recommend for a fun night out of fabulous creative with friends or famly. The Cherry Stroopwafel was not our favorite dessert on the menu. It felt like it was missing a scoop of vanilla ice cream.

Great place to eat wonderful food. If you are going in a group - You share dinners so would be worth ordering fewer dishes in multiples or you might feel dissatisfied. Only issue is that this is not a quiet place so groups can struggle. Sure they could not something about reducing noise levels.

So disappointed in the food and service, all which was mediocre at best. The waffle for brunch tasted like it was sitting under a heat lamp for an hour instead of tasting fresh and warm. It was a single, small waffle that was hard and lukewarm. Hardly a satisfying meal. The service girl with the red/pink hair left dirty, finished plates on the table the whole time. This was once a vibrant, fun place with great food. Now it’s just a loud venue with overpriced, blah food.

A friend and I went for dinner to catch up. IT IS REALLY LOUD IN THERE!!!! We wanted to talk, but we chose the wrong spot. It had rained earlier, so their outdoor seating was closed. I would have like to have sat outdoors. Inside is mostly family style seating. You're sitting next to someone you don't know. :-( The food, however, WAS EXCELLENT!!! Get a private booth or sit outside, trust me on this one,

Publican is an interesting restaurant in a not-yet-arrived part of town. The food is farm-to-table, with a focus on proteins. There are pictures of pigs on the walls for a reason. Pork is a specialty, and while I don’t partake, my dinner mates tried the Serrano ham & found it delicious. We also had sirloin with melon that was delightful & a branzino that was very tasty. Overall it was tasty fair, very fresh & thoughtfully preparer & served. The large dining room is noisy but in a strange way it added to the charm. Located in the Fulton Market, which I imagine one day will be lively & well populated. Just not yet.

Didn’t know what to expect but damn - so delicious! Hard to choose what to get but I would say 100% get the Pork Belly (if you’re into pork) and probably skip on the chicken because out of all the food, the chicken was the most basic and could have been served anywhere. The food was fantastic with a combination of flavors I wouldn’t have ever thought would go together so it was a cute experience :)

The food and the service here are always impeccable. This is the only place I trust enough to venture into foreign territory. This time I tried the sweetbreads. Delicious!! They kinda reminded me of eating a fried oyster in both texture (but sweetbreads were a bit drier) and and taste. I would definitely have them again. I highly recommend Publican. It's not pretentious and it's just plain spot on every time.

Got jerked around with a party of 2 seating this visit.
Always had booth seating which is very preferable in this
bustling place.
Show up early with reservation and denied seating at
any of the all empty booths, then denied seating at any
of the all empty tables near windows out of the main traffic
pathways. Seated at communal table and when I sat next to
my wife was told side to side seating was not allowed at the
table and made to move.
Daily bread, pickles, beets, peaches, chicken all very good
as always.
As we departed 2 booths and 2 window tables were still empty
so they could have easily accommodated us but instead we left
really annoyed.
It's their restaurant and their rules, but it's our choice not to return.

The Publican was a super inviting place with great food, aesthetic and service. The menu items were creative edits to traditional dishes. Definitely recommend this place and you must try the pecan sticky bun! If it’s nice out, try and sit outside: wonderful ambiance. And our server Joanna was awesome, couldn’t have hoped for a better experience.

Great experience eating out on the patio an the Publican for brunch. Our bill had extra drinks on it which we didn't order but the waiter got them taken off. Overall, the food was great and we enjoyed our experience.
