From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Dennis Bernard have developed a network of purveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander and now Beer Director Adam Vavrick, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

I've been here a few times. Always a safe bet for late night quality food that isnt overpriced. I've gone down the menu twice now, truly cant go wrong with your selection. Remember, share things! Everything on menu is perfect for sharing!

Very good food, concept and atmosphere. The employees are wonderful!!!! For a romantic night out or to catch up with friends, this isn't the place. Extremely loud noise levels.

Publican just keeps getting better and better. I'm fortunately very local. So i'm a frequent visitor. Their pork rinds are amazing. The Belly Pork and Porchetta rock. Did the Taste of 3 Hams to start the evening. They are flavorful and interesting. Especially with the side of apples. All soaked down with a liberal selection of beers from the excellent selection. A real must do place. It's fabulous.

The flavors, food, and service were wonderful. However, being our anniversary, I expected to be seated at a table for 2...instead we were seated at the end of a table of 8 business people...which was a tad bit awkward.

Communal eating crammed together in a loud noisy room with music playing in the background is not the relaxing dinner we had hoped for. The food was ok but pricey. Good beer selection.

One of the most unique restaurants in Chicago with a menu that is clearly given great attention. Growing up downstate I was glad to see menu items from many small towns in Illinois. The passion that the chefs, owners and wait staff have for this restaurant cannot be denied.

Be prepared to be seated at one of those long tables...no matter how big your group is...Food is not bad, but a bit pricey.

This is a very busy place so the service was okay, though they are friendly. The food was good and fairly unique and that is why I would return to this restaurant.

We have been here several times - were in a party of 4 and all our entres came out at least 20 min apart- made for a very disjointed meal experience- carrots came out after last entree served- we never really thought of this as a tapas style establishment -food itself was very good but meal didn’t flow well

Dined at Publican while visiting Chicago on the recommendation of friends. Had a truly outstanding meal that will be the highlight of our visit.

Food is excellent, interesting cocktails and an amazing selection of beers. Our server, Darcy, was great. She was a lot of fun, gave us great recommendations and was very attentive.

Entrees are served family style and the portions are large. We probably ordered too much food. There were 6 in our party and we ordered 2 appetizers and 7 entrees and 2 deserts. So, the recommendation is don't fill up on the bread (which is wonderful) and don't order too much. The Porchetta was our favorite .

Highly recommend this restaurant. Easy to get to by the "L" or by driving.

My party had a great time at the Publican. Several of us had just finished the Chicago Marathon and we wanted to celebrate at a special place. A friend recommended the Publican, and it was a hit. We enjoyed the family style meal, the energetic vibe, and most importantly, the delicious food. Every single dish was delicious, from the ham to the veggies to the steak to the fish. And because it was family style, folks who wanted to try something adventurous (e.g., pork brains) could do so without fear of being stuck with something they didn't like. But everyone liked everything--would recommend the Publican to anyone looking for a great dining experience.

I wasn't overly keen on the seating arrangement, but if you don't mind sitting cheek by jowl with strangers if it's just the two of you then you'll be okay. The food was interesting, tasty but would have liked bigger portions. The service was very good.

I went here with coworkers and we loved the food and beer. We could barely hear each other when almost yelling, so be prepared for noise

Great food. But I didn’t like the family style seating at all. It’s like a ski lodge at lunchtime. You sit shoulder to shoulder with strangers.

Loved the farm to table menu with local farms named. Menu changes daily so you know you’re getting fresh foods in season. Very well informed staff to help with selections. Great service.

Everything was spectacular. Food, wine, and beer recommendations were all too notch. We did request a table for 2 and were sat communal (which is the majority of seating). Our request was not granted, but we did see empty tables, which was a little discouraging.

Our meal was very good with highlights being the beets and charcuterie plate. Its a but tight at the community tables and would be hard to converse with a group larger than 4. But recommend the place hands down.

We ordered the pork ribs and lamb porterhouse. Although very tasty the actual cuts of meat were extremely fatty so much so that half of the rib order was inedible. I told our server who very kindly took the pork dish off the bill. I will definitely return and try some of the other menu offerings.

This is my second time eating at the Publican - the first in 2012, and the second this week. I was excited to share the experience I had 6 years ago with two friends after a work conference. But overall... it was not something we enjoyed fully. The food is as good or BETTER than I remembered it, the decor and service was stellar, but it... was... really, really loud. And we were a group of three 35 year old guys who normally don't care about loud. But we had no opportunity to chat about the conference we attended, or catch up with each other - we were yelling - and gave up.
I get the vibe they're going after - communal tables, wide open space. It looks super cool. I love it. But it's really form over function. The acoustics are horrible, and amplify every person's voice, so that the person next to them has to downright yell. We ended up not talking the full meal, and left to go get cocktails and dessert somewhere else.
I LOVE everything about the Publican - except the ambient noise. Seriously, it's louder than a Chuck-E-Cheese in there. If they can do something like some funky fabric dividers, or some cleverly-disguised sound-absorbing panels, or even some fabric from the ceiling... I will go back in a heartbeat.
Please, Publican, take a look at the effect your super cool decor has on the dining experience - which is the main point of why people come.

The restaurant is extremely loud and not conversational friendly. We arrived at a time when there were a lot of vacant tables and they would not let us sit at a few tables as they were saving them for larger parties. We ordered the sweet potatoes which were very delicious, then the fritto misto, and last the porchetta. The porchetta dish was enough for 4-5 people and it would have been nice if the waitress informed us of this. I thought the food was good but not anything that I’d go back for when there are so many restaurants in the city.

After my girlfriend and I went here for brunch a couple of years ago, we knew we had to come back for dinner the next time we visited Chicago together. Fast forward to this past weekend when we got our chance. Our second meal at The Publican did not disappoint and was an all-around great experience! The food was truly awesome, but so was the service (which made the meal even better!). Plus, they have a great beer list too.

Thanks to the staff for providing A+ service and kudos to the kitchen for crafting some seriously delicious food. We definitely plan on visiting again the next time we're in Chicago!
