From the OpenTable editors: Denver Tasting-menu hotspot The Wolf's Tailor centers around Colorado's farmers, millers, and fermenters. Dishes might include wood-fired piada made with Colorado grain from Dry Storage Mill or a Tetsukabuto mole with fermented squash. The philosophy, "In Defense of the Maker," means backing the people who grow and make the food. Settle into the dining room, garden, or a private outdoor tent at Colorado's only two-MICHELIN-Starred restaurant.
Executive chef: Kelly Whitaker

Fall Tasting Menu
$225.00 per person
1 - 8 people
Mar 1, 2025 - Nov 30, 2026For our fall season we explored corn as an ingredient. In spring '25 we planted 10 acres of corn in Colorado partnering with a local seed bank. This menu explores our journey of research and development around this while thinking about our sense of place in Colorado, showcasing charcoal and wood fired cooking, regenerative local grains, and domestic proteins. PLEASE NOTE, with the exception of severe food allergies, we are unable to accommodate dietary restrictions or food aversions. Due to the nature of our current menu, we cannot accommodate corn, sunflower, sesame, ginger, allium, nightshade, soy, mushroom, and vegan (if honey is not OK) allergies. Multiple dates availableThis season, The Wolf’s Tailor returns to the most primal form of cooking, with fire as the central heat source. The new tasting menu is built around the hearth, robata grill, burning woods and charcoals, donabe pot cookery, steam, and smoke, and dives into sustainability in chocolate as a featured research project of the season. Rooted in Colorado ingredients, the $245 menu is served beginning December 4. PLEASE NOTE, with the exception of severe food allergies, we are unable to accommodate dietary restrictions or food aversions. Due to the nature of our current menu, we cannot accommodate corn, sunflower, sesame, ginger, allium, nightshade, soy, mushroom, cacao, and vegan (if honey is not OK) allergies. Located inside @claytondenver is the new limited-time summer/fall dining experience from @ie_kelly and the team behind @thewolfstailor At @sheep_twt you’ll enjoy the taste of fine dining at $95 per person for four courses. My favorite part of this dining experience is how you get options for the courses, meaning if you bring a group you can all order different things to try. Did I mention the upgrades? I highly recommend ordering the bone marrow butter with caviar for their piada bread. Literally the best thing I’ve tasted and I’m still dreaming about it. Designed with a casual atmosphere in mind and using local makers and themes for Colorado, you have to try SHEEP asap. They’re open for bookings until October 4th! #thingstodoindenver #denverrestaurants #denverfoodscene #michelin #colorado

Wolf’s Tailor is truly an experience! Each dish is hand-crafted to make each bite irresistible 🐺! Wolf’s Tailor is superb by receiving a Michelin star as well as sustainable by receiving the green star ⭐️🌎! We started off with a bento that had a fresh oyster, panna cotta, and a tartlet 🦪! Each bite was so flavorful! What a perfect way to start! Then, we had the bluefin tuna with kumquat kosho and strawberry 🐟! Then, we had their locally sourced mokum carrot, huckleberry, and sunflower halva! This reminded us of the transition from summer to fall 🍁!Then, the main course a Rohan duck in vietnamese curry 🦆! The duck was so crispy and flavorful! After that, we had a delicious bucatini with their wasabi and green tomato sauce🍝! And the other main course which was a wood fire king salmon in a tom kha broth and cantaloupe! The fish dishes today were amazing 🎣! For dessert, we finished off with a frozen melon sorbet In tomato water and strawberry vinegar🍈! And finally, the corn, pecan, and tarragon dessert which ended the night perfectly! 🌽 Wolf’s tailor was amazing and super attentive! Super deserving of a Michelin star and their courses were meticulously planned ☺️! Thank you for an amazing time @thewolfstailor
