This is absolutely the best restaurant in town. The service is first rate and the food is delicious. The wine list is also top rate and cocktails are done professionally. I eat here all the time and it is my favorite. Denise Vargas is to be commended for setting high standards.
Absolutely beautiful restaurant with amazing service and exceptional food. Hugh quality prime steaks cooked to absolute perfection. Lollipop Colorado lamb chops are beautiful 😍 Highly recommend for any special occasion. Impressive!

My wife and have been here a few times and are always impressed with the food. The service is impeccable.
Our group started with an amazing appetizer of Lobster deviled eggs, ahi tuna and onion rings. Followed by a filet, chicken, 2 fish dishes. Larry, our waiter, was fantastic and the service is always top-notch. I cannot say enough great things about the food, the ambience, the service. Always will go back whenever possible.

Vargas must do better with gluten free options. My daughter tested her food TWICE with her Nima Sensor and there was gluten found both times. The cook finally realized that there was wheat in the sesame seeds so it took a while to figure it out.
The rest of us enjoyed our meal but my husband's wedge salad wasn't very fresh.
An offer of bread would be nice sometime during the meal.
My husband and I went to Cut & Catch for our 20 anniversary. We’ve never been before and were so pleasantly surprised by our experience. Our waiter was wonderful and the food was perfect. We had the chance to talk to the owner who shared a bit of her island knowledge with us. We will definitely be returning.
Everything was outstanding - from our lobster bisque and wedge salad, to the filet, snapper, and airline chicken. We ended the meal with a Paco Dome - ALWAYS a fun and delicious way to top it all off. As usual, an exquisite experience.
Great food and service. Our table was next to the door :( the evening was chilly so every time the door opened we got a blast of cold air
New Years eve
We had one of the most delicious dinners ever! So so good. The servers would all come out together to deliver our drinks and food. There was one for each of us. Great presentation and service! Highly recommend.

We were in Galveston for our first anniversary and I booked this place. I’m glad I did the restaurant itself is nice and it was highly recommended. We got the surf and turf sampler for two and it was pricey but well worth it. It consisted of steak, lobster, shrimp, and scallops. Everything was cooked to perfection and tasted delicious. The wine selection was nice and the prices weren’t exorbitant by restaurant standards. We would without a doubt go back again. All of the servers were helpful and the manager checked on us a few times and the owner greeted every table

Excellent food & service. Beautiful upscale decor. GREAT wine list by bottle, half bottle & glass. Very strict dress code for a tourist beach town but overall an excellent restaurant! We had a great wedge salad & I had the bone in pork chop & my husband had the salmon. Both dishes & our wines were excellent. Wine is a tad pricey by the glass but they were excellent. You must try “The dome” for dessert. A dome of chocolate containing chocolate cake & cinnamon ice cream & then warm chocolate ganache is poured over the top. Delicious!
The owner is the son of Paco of Rudy and Paco, the best restaurant in town. This restaurant definitely takes plenty of pages out of their book with high attention to detail and service. I had the wedge salad and the salmon and spinach. It was perfect!
Excellent customer service! Food is cooked and seasoned exceptionally well and consistent on steak temperatures. Great selection of wine and spirits, any my Old Fashion is always on par!
The food and service were fantastic and impeccable. Paco and his team are top notch. Highly recommend you try the bread pudding, it is the best! The chef even created a special congratulation desert for my daughter, she had just completed her Masters Degree.
We ate here for our 30th anniversary. The food was fantastic! The lamb chops on the appetizers was so delicious!

We went to celebrate our anniversary. We left knowing we would return many times in the future. Everything exceeded expectations. Highly recommend. Thank you for making this an exceptional and memorable dining experience.
We had the red snapper with the angel hair pasta topped with loads of lump crab meat. Absolutely the best meal I have ever had. The lobster bisque was spectacular. The service really does take it over the top. It made the dining an experience one to always remember at being completely satisfied. If you want you to make an impression or celebrating a special occasion, this is the place to go.
The service was impeccable, 5 star quality. The food was the best I've had in an upscale restuarant, plentiful and delicious. 5 star to the chef and servers. Very attentive but not bothersome. The bartender was very knowledgeable and helped considerably. The Vargus is the best, and I have had many so called "5 star" meals all over the world. Tokyo, Amsterdam, Australia, Austria, and London, to name a few. Even Vegas and LA. All during my Navy days and retirement travels since 2009.
I highly recommend Vargas Cut & Catch.

It is still the best overall in Galveston.
Very nice place to go for excellent food and top notch drinks. On the high end side for sure price wise but is still comparable if not less than other steak houses on the island. We will be back, wait staff are excellent as well and very attentive.
