Even if you are not in a romantic mood when you enter to dine fabulously, you will be upon departing! This is one of the jewels for Italian in the whole Caribbean. Marco, the venerable and famous patron, has created a place of refinement and excellence. The pastas are perfectly cooked with the Carbonara being unbelievable. Formerly this lovely dish was only a special order, but now we fortunate diners may indulge every evening. Another absolute highlight is the cool and refreshing seafood salad. Many patrons only come for this luxurious assortment of beautiful seafood salad. Cocktails are an art here and should not be missed with Hugo’s and various martinis just superb! Thank you Milos!

Returning to Pardon My French after our first visit in 2025, we found the atmosphere every bit as captivating as we remembered. Service was exceptional, with Sava demonstrating genuine hospitality and remarkable attentiveness, even thoughtfully advising us of renovation work and strong adhesive odors on the second floor. The evening began with The Gold of the Charentes and White Altitude Negroni cocktails. Both lobster casseroles were beautifully executed, followed by Wagyu prime steak and duck breast, each expertly prepared and presented. Chocolate mousse and an elegant chocolate sphere provided a fitting conclusion. The prix fixe menu demonstrated consistency, thoughtful presentation, and outstanding execution throughout. A memorable dining experience where culinary excellence and genuine hospitality complement one another beautifully.

Loved the service from the moment we arrived. We enjoyed starting the evening by ordering drinks in the first room before being brought to our table for dinner. Our server was really sweet and attentive. The food was good. The vibe was good. If it’s your birthday and you don’t like being sang to let your server know in advance because they sing!!

Our in house DJ drives the vibe, inspiring nightly sunsets from high atop Diamond Mountain.

The only reason I gave Bovin a 5-star rating is because the scale does not go up to 10 stars! The food, service, and atmosphere were among the best we have ever experienced. Our server, Chad, was extraordinary, a complete professional, and Angel, the manager, was also extremely attentive. We observed similar professionalism among the entire staff. I ordered the skirt steak with a side of chimichurri, and my wife enjoyed the ribeye. Both were prepared to perfection and were delicious. For a restaurant of this quality, the prices were quite reasonable. Whenever we return to Sint Maarten, we will absolutely visit Bovin again!
