Cheng Mapo Tofu is a tofu dish created in the mid-19th century by “Auntie Cheng” (Cheng Mapo) in Chengdu, Szechuan Province, China. All the carefully selected ingredients are specially imported from China, the all-important “Doubanjiang” (broad bean chilli paste), capsicums and Chinese pepper. The Szechuanese chef creates a totally authentic flavour. In addition to spicy Szechuan staples, such as the Mapo Tofu, Szechuan prawns in chilli sauce, and Dandanmian spicy noodles, a wide range of Szechuan dishes reflecting the incredible diversity of cooking methods and flavourings are on offer reflecting “a hundred ways to cook a hundred ingredients”, that the province is known for.
