The restaurant focuses on seasonal cooking, featuring a rotating menu that changes depending on what ingredients are freshly available. Additionally, all the seafood brought in is purchased from sustainable and environmentally conscious sources. The menu is focused primarily on American comfort food, with a lot of the items taking their inspiration from the South. The Canyon Grill specialty is the Slash N Burn catfish, a whole farm-raised catfish fried crispy and served with black bean sauce. On average, these hearty fish weigh an impressive two pounds each. While rustic, Canyon Grill is certainly not unrefined.
