We came to northern Italy for a week and travelled through several cities, but for me the highlight was always going to be Bologna: finding somewhere truly authentic, somewhere capable of delivering both o flawless lasagna and a proper tagliatelle al ragù Bolognese. I had built it up in my mind beforehand, too. And somehow, it still exceeded every expectation. Cento per cento. The sprawling, old-world interior, untouched by modern polish or glass-fronted pretension, revealed a surprising number of tables. We arrived early and settled into a corner, but within fifteen minutes the place was full. The service was impeccable: attentive, warm, and effortlessly efficient, never leaving us waiting more than a moment. We began with the Misto di Salumi to share, alongside superb bread and Giusti balsamic. It was outstanding, a beautifully balanced selection, each element noticeably better than others I've tried, and remarkable value for the price. For our primi, we ordered the two signature pasta dishes, both extraordinary. No unnecessary flourish, just generous portions executed with absolute confidence. A couple of glasses of the recommended wine complemented everything perfectly. We were already comfortably full, but shared a cotoletta which was, once again, faultless. To finish, we shared a tiramisu, the first genuinely authentic one I'd found during a week-long search for the ultimate version. And somehow it cost a fraction of what lesser versions elsewhere had charged. In fact, the entire meal came to little more than €50 each, less than you'd pay in many pubs these days. I suppose the point is this: I should caveat that I'm not an Italian food connoisseur, but most of us have eaten Italian food all our lives and often wondered what the original versions are supposed to taste like.
