My only critique would be that the meats could benefit from a bit more seasoning or brining, as some cuts were slightly lacking in flavor. I arrived around 11:20 before they opened and waited outside to be the first guest in line. Somehow that quiet wait made the whole experience feel even more special. The moment the doors opened, everything felt calm, warm, and intentional. The lighting, the clean wooden counter, the peaceful atmosphere — nothing felt rushed. The chef worked so carefully and precisely that every single piece felt thoughtfully crafted. What shocked me most was the temperature of the sushi. The rice was slightly warm while the fish stayed cool and delicate. The moment it touched my mouth, everything melted together perfectly. I literally paused after the first bite because it tasted so different from regular sushi. The otoro melted like butter, and the uni tasted incredibly fresh and sweet. Honestly, I kept thinking, “How is this only $55?” But what made the experience unforgettable was the chef himself. He showed photos of the fish, explained where they came from, and talked about the texture and flavor of each piece. It didn’t feel like just eating sushi — it felt like an experience. In LA these days, it’s hard to find this level of quality and care at this price point. For a couple of hours, I felt completely relaxed, happy, and transported somewhere far away from the city.
