From the service to the food, this dining experience was exceptional. Our server Jamie knew the menu well and how to accommodate dietary needs, as well as assist with wine preferences. I have been there many times over the years and it has never ceased to deliver above and beyond my expectations. We arrived ahead of our reservation so we decided to sit at the bar. I ordered their old-fashioned cocktail and my friend got their margarita. Both were well-made and nicely presented. After we were seated, we were graded by our server, Thomas, who walked us through some of their offerings. He had full command of the menu and did it with a warm, low-key professional style. We opted for a version of a chef tasting meal with wine pairings. My friend and I started with their NC Siano Burrata salad. Glühwein poached figs, rooftops, salted lemon evoo, sunchoke, chips, and local sourdough. It was a most unusual salad, and we were very happy with our selection. This was paired with a 2025 Alexana Winery Pinot Gris from the Willamette Valley, OR. Next up was a Lamb Shank. Farm & Sparrow Cateto grits, looking glass cheddar, natural jus, and gremolata. This was super yummy. It paired perfectly with a 2024 Public Radio Granoche from the Alexander Valley, CA. For the main course, we had a spectacular Elk Loin from New Zealand. I can’t remember what the wine pairing was but it was some kind of Cabernet Sauvignon. We got a side of their crispy, roasted brussels sprouts. My birthday dessert was a fabulously delicious carrot cake caramel, paired with a 10-year-old Tawny Porto, Sandeman, Portugal. It was a wonderful way to wrap up this most satisfying dinner. If you are ever in Asheville, North Carolina, be sure to check out the Red Stag Grill. The hotel is amazing also. From its almost 360 view of the mountains, particularly beautiful at sunset, to its sleek modern decor, Wildwood Still is a spectacular experience. And that's before you get to the world class food and drinks. We started with spicy roasted edamame, then went on to their signature duck confit bao buns, Chinese BBQ ribs and decadent smash burgers. Desserts were equally awesome, a Basque cheesecake with citrus whip and barley gelato with red bean sauce and honey brittle -- all original, unique and delicious.
