His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. Awarded the prestigious AAA 4 Diamond Award and ranked fourth in the country for fine dining by Trip Advisor, Chef Olea is honored to have won the 2022 james Beard Award, Best Chef: Southwest.

We were 4-3 who ate meat and fish and one vegan. Chef prepared all meals with great flavor and presentation. The vegan meal was off the charts and so very appreciated. The wait staff are amazing-so caring. One of top restaurants in town for fine dining-and for the vegan, the top.

We’ve dined at Escondido many times and have never been disappointed. Last night, the Silver Coin Margarita was perfect. My wife and I split chips and guacamole which had nice big chunks of avocado. We both had a Chile En Nogada (can’t get away from it) and split an order of Esquites (best in Santa Fe). Service was very friendly and attentive.

Café Grazie is a diamond in the ruff. It is an intimate, quiet, and inviting cafe with absolutely excellent food, and warm and friendly service! I had the Pollo Marsala and it was outstanding. I wished I lived in the Santa Fe area as I know I would make this a very regular place to go. Thank you Café Grazie!
