Our "7 Seas" project is a gastronomical endeavor in search of exciting fresh seafood dishes made of fish caught from according to Jacques Cousteau "one of the great aquariums in the world": the sea of Cortez. Dishes are inspired from Old and New world, Oriental and Mexican legacies. As a complement to our main menu, we offer Mexican dinner specialties. Wine is carefully selected and brought from wineries all over the "7 Seas" from California, Mexico, Chile, Argentina, France, Italy, Germany, Australia and New Zealand. Our bread, desserts and pastries are done in-house by our talented pastry chef.

    The Vela experience starts with the evening view of the Infinity Pool and the ocean. There is a calmness in the air when you are seated at your table. Immediately the service of the waitstaff takes center stage. The service is always there to remind you that you are the most important customer at that moment. It's a good feeling. The food is meticulously prepared. So nice to start with an amuse bouche. The appetizer GARRA DE LEÓN SCALLOPS were perfectly cooked and the presentation was a delight. The entrees were amazing and you could taste the smoke from the fire that they were cooked on. Where else can you have a perfect meal and stand up from your table, when you are leaving, and see a view so beautiful.

    Ivan was absolutely fantastic. He was so well informed and knowledgeable on the entire tequila making process as well as very knowledgeable on winemaking as well. As tequila drinkers who thoroughly enjoy sipping tequila this was an outstanding experience and highly recommended for those who enjoy tequila.
