In 1998, Buddy Guindon, his wife Katie, and his brother Kenny opened Katie's Seafood Market in Galveston, Texas. For more than 20 years now, Katie's Seafood Market has provided the highest quality of products available to its customers. The majority of seafood comes from local fishermen and shrimpers, including Red Snapper, Grouper, Golden Tile Fish, Flounder, Oysters, Shrimp, and Blue Crabs. A producer contacted Guindon in the hopes of doing a reality show about his family business. In 2015, the reality show 'Big Fish Texas' came to life on National Geographic. As a supporter of the local economy, In September of 2019, Buddy opened Katie’s Seafood House, next to the market. Katie’s seafood market supplies the restaurant with all fresh seafood. We take pride in being the only local seafood restaurant on the island that brings fresh fish straight from the boat and to your table.

    The service was excellent, we could not have ask for better. And the food was outstanding. I had the parmesan crusted grouper and my wife had the lambchops. Both dishes were great. I especially enjoyed the capers and lump crab in the sauce. After dinner we had an unexpected surprise, the waiter brought out a bread pudding cake with a candle for my wife's birthday. We had an excellent time and I can highly recommend Rudy and Paco's for a dining experience.
